Recipe – Mediterranean pizza fish

Ingredients

Skinless and boneless fresh fish fillets (salmon, tuna, cod)

Homemade or ready tomato sauce

Grated cheese, olives, peppers, sweetcorn, mushrooms, onions, fresh herbs or any other pizza toppings.

Method

Preheat the oven to 180C, fan assisted. Brush an ovenproof dish with olive oil and place the washed and pat-dried fish fillets in it. Cover the fish with the tomato sauce and sprinkle over some grated cheese (mozzarella, parmesan or cheddar). Add the other pizza toppings according to taste. Loosely cover the dish with kitchen foil and bake for around 25 minutes or until all the cheese has melted away.

Serve with steamed broccoli florets and rice, pasta, polenta or mashed potatoes.
